Chef Dominique Laurencelle
Born and raised in Manitoba, Pastry Chef Dominique studied Culinary and Baking and Pastry at the Pacific Institute for Culinary Arts, in Vancouver. Her career encompasses many notable restaurants such as Lumiere, the Manitoba Club, the Bearfoot Bistro, La Rua Restaurante and Quails’ Gate winery. CMH Valemount heli-ski lodge and Lanagara Island Lodge were her home kitchens for 5 years prior to becoming a part of the Boom + Batten team as Head Pastry Chef. Chef Dominique attributes her approach to desserts and pastries to the many people and cultures she has worked with in her career thus far.
